Grape harvesting at Altas Quintas is carefully planned so as to ensure optimum
maturation at gathering time, which usually takes place in the first fortnight
of September.
Harvesting is entirely manual, done in the cooler hours of the day, with a
two-stage grape sorting process being actively enforced: the first at the end of
the rows, the second upon delivery to the cellar.
Grapes are gathered on a variety-by-variety, plot-by-plot basis and immediately
transported to the cellar in small 20-kg baskets.
