Ageing takes place in wood casks, which we only use for up to three years and carefully select according to grape variety and final wine blend. Altas Quintas boasts a plethora of oak barrels ranging not only in their origin but also in the degree of toast and type of grain.
It is in this room that each of our wines quietly and gradually develops into the luscious blends that bring about the fulfilment of the Altas Quintas dream.
